Chocolate makes me happy

I know, another post about chocolate!!  But I have been feeling a bit blue lately so I am working on doing more of the things that make me happy, chocolate happens to be one of those things!!  Good food in general makes me pretty happy actually, hence this blog.  Also being grateful for things always helps to put life in perspective.

I made a meal for my good friends/flatmates the other night, Chicken Saagwala (check out Nadia Lim’s website for this recipe, it was a hit!).  I remembered how nice it is sharing a meal with people, and how grateful I was for this (the people and the food).  Our lives often get so busy that we do not take this time to just sit and eat, we take work home with us and eat in front of the computer or unwind by watching TV.  Taking the time to sit without distractions meant not only were we more mindful about what we were eating, but chatting about our days and getting things off our chests about things happening in our lives was very therapeutic! So we agreed to make this a regular thing in our household 🙂

This was what we had for dessert, beware it is rich, and you must be a peanut butter lover to enjoy.  This recipe was inspired by another peanut butter and chocolate lover Libby (from the Julia and Libby blog), who I heard on George FM; check out some of her amazing recipes and insights here.

fudge 2Macadamia Peanut Butter Fudge

makes about 30 squares

3/4 cup peanut butter

3/4 cup of coconut oil

1/2 cup raw cacao powder

2 TBsp honey

1/2 chopped macadamia nuts

1 tsp pure vanilla extract

coconut flakes to top

To prepare:

Melt coconut oil by placing in a small bowl on top of a bowl/pot with boiling water, similar to a bain-marie, however I didn’t use the stove.

Add honey to the coconut oil so it melts a bit too, then add the peanut butter, cacao, and vanilla, mix well.

Lastly add chopped macadamias and mix through (about half a cup and you could use any nuts).

Pour mixture into a square tin lined with baking paper, scatter with coconut flakes to decorate – refrigerate or freeze for an hour or so until set.

Once set cut into small squares, this melts easily so keep in fridge or freezer.

  1. Looks good Sarah! Agree it’s nice to sit down and chat with others while eating – so many benefits – social aspect, more aware of what you’re eating, eat slower… Hope you beat your winter blues soon x PS that jar of peanut butter looks amazing!
